Mafini za doručak / Breakfast Muffins

Za većinu dece počeo je raspust. Sada su tu roditelji na mukama kako deci obezbediti dobar i kvalitetan doručak, bilo da su roditelji na poslu ili ne. Ja vam predlažem ove super zdrave i ukusne mafine...

Potrebno

  • 2 jaja
  • 150ml jogurta
  • 50ml ulja
  • 100gr sosa od jabuke*
  • 1 zgnječena banana
  • 4 kašike meda
  • vanila*
  • 200gr crnog brašna
  • 50gr ovsenih pahuljica
  • 1,5 kašičica praška za pecivo
  • 1,5 kašičica sode bikarbone
  • 1,5 kašičica cimeta
  • 100gr borovnica ili nekog drugog voća
  • 2 kašike semenki (suncokreta, susama...)
  • još malo ovsenih pahuljica za posip
Priprema
Zagrejati rernu na 180C. Obložiti pleh papirnim korpicama.
Umutiti jaja, jogurt, ulje, sos od jabuke, bananu, med i vanilu. Posebno pomešati pahuljice, brašno, prašak za pecivo, sodu, cimet i semenke. Pažljivo dodati i borovnice i sve lagano promešati. Dodati mokre sastojke u suve i promešati sastojke tek toliko da se povežu. Rasporediti masu u kalupe (pune negde oko 2/3) i posuti sa malo ovsenih pahuljica. Peći mafine oko 25-30'.

* Za sos od jabuka, iseckajte jabuke na kockice i staviti na vatru sa malo vode.Kuvati tek toliko da tečnost ispari, a jabuka omekša. Napravite veću količinu, pa ostatak zamrznite u manjim porcijama.
 * Ja koristim domaći ekstrakt od vanile, ali možete koristiti i vanilin šećer u kesicama (jedan je dovoljna).

Breakfast Muffins

Ingredients
  • 2 eggs
  • 150ml yogurt
  • 50ml oil
  • 100gr applesauce*
  • 1 mashed banana
  • 4 tbsp honey
  • vanilla*
  • 200gr dark flour
  • 50gr oatmeal, old-fashioned
  • 1,5 tsp baking soda
  • 1,5 tsp baking powder
  • 1,5 tsp cinnamon
  • 100gr blueberries (or some other fruit)
  • 2 tbsp seeds (sunflower, sesame...)
  • plus some more oatmeal for top
Directions
Preheat the oven to 180C. Line a muffin pan with paper cases.
Whisk the eggs, yogurt, applesauce, banana, honey and vanilla. In a separate bowl mix the oatmeal, flour, baking soda and powder, cinnamon and seeds. Carefully fold in the fruits. Add the wet mixture to the dried one and mix just until mixture comes together. Spoon the mixture into the paper cases and sprinkle with some oatmeal on top. Bake for 25-30'.

* For applesauce put the diced apples into a saucepan, add some water and cook until the liquid evaporates and the apples softened. Make a bigger batch and freeze the rest in smaller portions.
* For the vanilla, I'm using homemade extract but you can use any type you like.
